Hi all!
Well i'm back from another weekend of excitement and I'm pleased to report that I placed 3rd in my division-Bikini Tall at the SABBA Provincials!
The week before Provincials was similar to my one week out plan for Novice, but this time I was a bit more lean going in to competition day. My last day to workout was Wednesday and then Wednesday night I started to carb & fat-load! This involved adding 3 oatmeal baked squares with butter on them at select meals for the next couple of days leading up to Saturday - Competition day! I have shared these squares with the Anytime Fitness clan and have gotten rave reviews so I will share the recipe with you:
Lemon Oatmeal Bake
-16 egg whites
-1/2 cup 100% natural peanut butter (I like the all natural crunchie peanut butter made from roasted peanuts)
-2 packs lemon - carb free/sugar free Jellow
-1 tbsp vanilla
-4oz rolled oats
-2 tsp brown sugar twin
Mix all ingredients together and pour into 9x13 baking pan lined with parchment paper. Let stand for 10minutes and then bake at 350 degrees for 35-40minutes.

Competition day was another long, exciting day filled with meeting new friends and reacquainting with familiar faces from the Novice show! It was refreshing to share all of our training experiences and the journeys that we've been through to get into competition shape. The most common conversation peice, of course, was our post-contest treat! I had my yogurt covered raisins in my suitcase ready to go! Others had their baked goods and sweet treats with them. Even though everyone is so excited for that post-competition treat/meal, the number one item I could not wait for the minute I got off that stage was WATER!!! This time, the dehydration really got to me.
Sunday was a day for me to rest and refuel! I made my favorite meal-Turkey Pizza (recipe below) followed by a stop at the Cold Stone Creamery! This was my first time experiencing the ice cream haven and I think it may be a post-competition ritual!
So now I am 8 weeks out from Nationals, which take place July 23rd in Saskatoon! I was back at the gym on Monday and the plan going into the next competition is to put on a bit of weight and to step on stage a bit fuller than I did for Provincials. Cannot wait!

Turkey Pizza Recipe (the crust is made out of turkey!!)
*This makes 8 servings
Crust
-1lb extra lean ground turkey breast
-1/2 cup egg whites
-1 cup wheat bran
-1 cup oats
-basil
-oregano
-pepper
Mix ingredients and spread thinly on baking sheet lined with parchment paper. Cook in oven at 350degrees for 15-20minutes (it is baked again with toppins on top so don't overcook at first bake).
Topping
-4 cups spinach
-1/4 diced yellow onion
-mushrooms
-minced garlic
-water
Simmer in frying pan until spinach is cooked down and toppings are done how you like.
Spread tomatoe paste on turkey crust and top with sliced tomatoe. Add topping mixture and top off with cottage cheese. Bake at 350degrees until cottage cheese is melted (approx 15 minutes).
